So my boyfriend introduced me to what he and his sister call Cowboy Supper and I fell in love with it. I’m sharing it because it’s kid approved and cheap as crap and makes 2 nights worth of meals for us (we have a family of 6) You can eat this by itself, with tortilla chips, as a burrito, taco… whatever you want really.
$4 – 1 lb hamburger browned or more if you like a lot of meat. We do 1.5.
$0.50 – 1 pkg taco seasoning
$4 – 8ish diced red potatoes
$1 – 1 can rotel (do not drain) if you want spices get the hot one
$0.60 – 1 can corn (drained)
$1 – 1 can mixed chili beans you can opt for a hot chili sauce as well
$2.20 – 1 bottle your choice of BBQ sauce (we use sweet baby rays)
$2 – Tortilla chips/tortilla shells
$15 for 2 nights of dinner 🤗
While browning and seasoning the meat be boiling the potatoes. IF you are planning on doing it

Cowboy Supper Recipe:

Ingredients:

  • 1.5 lbs ground beef
  • 1 packet taco seasoning
  • 8 red potatoes, diced
  • 1 can Rotel (hot, if desired)
  • 1 can corn, drained
  • 1 can mixed chili beans (or hot chili sauce)
  • 1 bottle BBQ sauce (e.g., Sweet Baby Ray’s)
  • Tortilla chips/tortilla shells

Instructions:

  1. Brown the Beef:
    • In a large skillet, brown the ground beef over medium heat until fully cooked.
    • Drain excess fat if necessary.
    • Add the taco seasoning to the cooked beef, following the instructions on the packet. Stir well to coat the meat evenly.
  2. Boil the Potatoes:
    • While the meat is browning and seasoning, bring a pot of water to boil.
    • Add the diced red potatoes to the boiling water and cook until they are tender but not mushy. Drain and set aside.
  3. Combine Ingredients:
    • In a large pot or Dutch oven, combine the browned and seasoned beef, diced potatoes, Rotel (with juice), drained corn, chili beans (or hot chili sauce), and BBQ sauce.
    • Stir the ingredients together to ensure everything is well combined.
  4. Simmer:
    • Bring the mixture to a simmer over medium heat.
    • Allow it to simmer for about 15-20 minutes, allowing the flavors to meld together and the potatoes to absorb some of the delicious sauce.
  5. Serve:
    • Serve the Cowboy Supper on its own, with tortilla chips for a hearty dip, or in tortilla shells for tacos or burritos.
  6. Optional Toppings:
    • Customize your Cowboy Supper with toppings like shredded cheese, sour cream, diced green onions, or fresh cilantro.
  7. Enjoy Two Nights of Meals:
