Buffalo Chicken Poppers Recipe:

Ingredients:

  • 2 lbs chicken, cooked and shredded
  • 1 cup Frank’s Red Hot Buffalo Sauce
  • 1 cup ranch dressing
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1.5 cups mozzarella cheese, shredded
  • 1.5 cups sharp cheddar cheese, shredded
  • 8 oz cream cheese, softened
  • 1 scoop sour cream
  • Flour, for coating
  • Eggs, beaten, for coating
  • Seasoned Panko breadcrumbs, for coating
  • Cooking oil, for frying

Instructions:

  1. Prepare the Buffalo Chicken Mixture:
    • In a large mixing bowl, combine the shredded chicken, Frank’s Red Hot Buffalo Sauce, ranch dressing, garlic powder, black pepper, mozzarella cheese, sharp cheddar cheese, cream cheese, and sour cream.
    • Mix everything until well combined, creating a uniform and flavorful buffalo chicken mixture.
  2. Shape and Freeze:
    • Take portions of the buffalo chicken mixture and roll them into bite-sized balls.
    • Place the buffalo chicken balls on a baking sheet lined with parchment paper and transfer them to the freezer.
    • Allow the chicken balls to firm up in the freezer for a few hours, ensuring they are solid enough for coating.
  3. Coating Process:
    • Set up a coating station with three separate bowls: one with flour, one with beaten eggs, and one with seasoned Panko breadcrumbs.
    • Remove the buffalo chicken balls from the freezer and roll each ball in the flour, ensuring they are evenly coated.
    • Dip the floured balls into the beaten eggs, making sure they are fully covered.
    • Roll the coated balls in the seasoned Panko breadcrumbs, pressing the breadcrumbs gently to adhere.
  4. Frying:
    • In a deep fryer or a large, deep skillet, heat cooking oil to 350°F (175°C).
    • Carefully fry the buffalo chicken poppers in batches until they are golden brown and crispy.
    • Use a slotted spoon to remove the poppers from the oil and place them on a paper towel-lined plate to absorb any excess oil.
  5. Serve:
    • Allow the buffalo chicken poppers to cool slightly before serving.
    • Optionally, serve with additional ranch dressing or your favorite dipping sauce.
